oh mercy, it has been too long since i have posted a "monday meal." not because i haven't been cooking, but because i haven't really tried many new recipes. well, i found some new ones...can't remember where i found them (awe just started typing the recipe and remembered it was through a mrs. dash website). this meal is really good, quite inexpensive, barely takes any time, and is surely a crowd pleaser with the fam! i doubled it and ended up putting a bit more chicken in it so it would be filled with lots and be a "main dish." i served it with steamed zucchini (which i also seasoned with the original flavored spice from Mrs. Dash. yummy. enjoy!
chicken and rice florentine
ingredients:
*1 can (14 oz) chicken broth
*2 cups minute brown rice, uncooked (i used fresh n easy generic instant brown rice)
*1 tablespoon Mrs. Dash salt-free lemon pepper seasoning blend (i found a generic at fresh n easy)
*1 tablespoon Mrs. Dash salt-free onion & herb seasoning (found mrs. dash original flavored one instead)
*2 cups cooked chicken, diced
*4 cups fresh baby spinach leaves
*1/4 parmesan cheese, shredded
preparation:
1. bring broth to a boil in a medium saucepan
2. add rice, seasoning blends and chicken; stir. cover, reduce heat to low and simmer 5 minutes. remove from heat and let stand 5 minutes
3. add spinach and stir until wilted. serve topped with parmesan cheese
