well, the cold weather is here and thus, we eat soup! well, the cold weather and my oven decided it didn't want to work any more {good thing i wasn't hosting thanksgiving!} this week i will share all the yummy soup recipes i am going to make. i am guessing most will be enough for two nights, so i may only share 3 or 4-depending upon how motivated i get.
this week's soup menu:
- sunday: white bean chili
- monday: tortilla soup
- tuesday: potato cheese
- wednesday: left over tortilla soup
- thursday: left over potato cheese
- friday: order pizza!!! :)
white bean chili
ingredients:
1 lb chicken cut and cubed (i use the already cut and cooked kind-i just cube it)
1 tablespoon vegetable oil
1 medium cut onion chopped (i really only used about 1/2 of the onion-eyes were watering too much)
1 tablespoon garlic powder
2 cans (14.5 oz) great northern beans (drained and rinsed)
2 cans (4 oz) green chilies
1 teaspoon cumin
1 teaspoon crushed oregano
1/2 teaspoon pepper
8 oz sour cream
1/2 cup whipping cream
1. sautee chicken, onion, and garlic powder in oil until chicken is no longer pink (or if already cooked, about 4 to 5 minutes)
2. add beans, chilies, and seasoning
3. bring to boil, turn down to simmer, uncovered for 30 minutes
4. add sour cream and whipping cream and serve immediately
makes about 4-6 servings
