hollywood lane easy enchiladas

i love that this is such an easy recipe with almost all ingredients probably on hand.  i took some ingredients from a menu last week and mixed them up in my head and came up with this really delicious concotion.  i just decided to give it a special name.
i am sure there are many more delicious ingredients to add.  feel free to add some to make it even better...just share them with me for next time.
i put a few pieces of chicken (3 to be exact for this recipe) in the crockpot this morning and added the following:
1 cup of orange juice
1/3 cup chili sause
1 tbsp brown sugar
1 tbsp soy sauce
1 tsp mustard

when it was finished cooking i turned the oven onto 375 and shredded the chicken inside the crockpot to allow the chicken to soak up the "sauce." 
in an 8 by 8 pan:
1.  layer about 3 tortillas on the bottom and then spoon in about 1/3 to 1/2 of the chicken mixture.  layer a little bit of cheese, black olives (i had sliced), and a few chopped onions.  
2.  repeat step 1 as many more times as you can (until the chicken runs out)
3.  i didn't put a top layer of tortillas on but did put some more cheese and then drizzled some tapatio over the top layer.  i would have probably used enchilada sauce, but i didn't have any.  it was either tapatio or del taco hot sauce...hahaha

i covered and cooked it for about 20 minutes.  it is already cooked, so it just needs to be heated up and allow the cheese to melt. 
it was delicious and we will be having leftovers for dinner tomorrow.  mark said it was a little spicy (adjust tapatio and chili sauce as needed)-but yet he still chowed on it.  i think it was too hot for the girls!  enjoy!
