feta chicken breasts

i am sure many of you (those one or two people that actually check out the blog, besides my mother, wait, i am not even sure she checks it out...hmmm) are near death starving as you have anxiously waited for my next "monday meals" (which i am about three weeks behind on).  so sorry to have disappointed you.  you may now eat and be nourished! 
this recipe is a YUMMY one (ok, when you love food, like i do, not much is going to be bad-or at least i probably wouldn't take the time to blog about it if it were bad).  i made this for a friend after she had a baby.  i figured it was relatively harmless for a nursing mother. 
1 package (10 oz) frozen chopped spinach, thawed (let me stop here and say, if you don't like spinach, this is wayyyyyy toooooo much-i'm just sayin')
8 oz feta cheese, crumbled
1/2 cup light mayonnaise
1 clove garlic, finely chopped
6 thinly sliced boneless, skinless chicken breasts, about 4 oz each (i never really pay attention to these little details-plus i don't have a scale to measure out chicken-but i thik my pieces may have been a bit big-note to self for next time)
1/2 teaspoon paprika
6 slices bacon

1.  heat oven to 325.  place a rack in a large baking pan (didn't have a rack, so i put it directly in the pan)
2.  drain and squeeze liquid from spinach.  in a medium-sized bowl, mix together spinach, feta, mayonnaise and garlic.
3.  in batches, place chicken breasts between sheets of waxed paper and pound to 1/8-inch thickness (stop #2-this is a fun interesting and messy process-beware-i used my hammer-and, might i mention, had to sanitize it afterward).  place about 1/3 cup of filling down the center of each chicken breast.  roll up and secure each with 2 toothpicks (this is where smaller pieces of chicken would have been nice-it was a little too thick and big)
4.  sprinkle with paprika.  wrap a slice of bacon around each piece of chicken and place on the prepared rack (or, in my case, the pan)
5.  bake at 325 for 55 to 60 minutes or until internal temp reads 160.  run under the broiler for a minute or two, if desired.

this is so easy and looks and tastes GREAT!!!!  the kids even liked it.
