so, this Monday Meals Mom took the night off and her LOVELY husband took her to one of her favorite restaurants...marios (Mexican food). this is the place we used to frequent (once a week, to be exact) while i was prego with addison (this is probably why i ended up with heartburn those nights-thank you tums). we LOVE this place and the service and quality are amazing...not to mention the food. i have been ordering the same thing since i first started going to marios-cheese enchilada with rice and beans. even though i just ate dinner, just the mention of this meal makes me hungry again...
ok, so, back to the recipe topic...since i didn't fix dinner last night, i tried a new recipe tonight. it was actually the sauce that was "new" to me. it was chicken with orange sauce. i put a few pieces of chicken in the crock pot this morning, but never added any sauce or soup or anything to it. it was pretty dry when i tasted it, so i hopped onto to my favorite search engine and typed in the words "orange chicken sauce." low and behold, many recipes came up, but i went with one of the easiest and fastest, since my chicken (not to mention my family) were ready. the sauce really added to the flavor. it wasn't like our favorite orange chicken at "The Wok Experience," but it was good, nonetheless. i mixed the sauce, heated in the mic and then added it to the chicken for about 10 minutes. it was perfect and i am already thinking of a new meal i might try on thursday.
the sauce consists of:
1 cup orange juice
1/2 cup chili sauce (word to the wise...this was A LOT of sauce and made it SPICY-so use accordingly)
1 tbsp brown sugar
1 tbsp soy sauce
1 tsp mustard
called for 1 clove garlic, minced, but i forgot that...
i mixed this up and then heated in mic for about 2 to 3 minutes...meanwhile, i added 2 tbsp of cornstarch to 2 tbsp of cold water and then added that to the sauce and heated again for a few minutes. this was supposed to thicken it up...it kind of worked. it actually thickened up in the crockpot after sitting for a few minutes. another word to the wise...pick out the chunks of cornstarch before serving, so your family doesn'g gag...that is what mine would have done.
kids didn't get it because it was so hot...although august did try it and liked it...but, i couldn't in good conscience ruin her tummy for the night by allowing her to eat a bunch. i am pretty sure mark liked it...so, overall, a winner with me!!!
